When I built my D'Lite 44 I went straight to 6l6's so not sure what 6v6 would sound like in it.
I have added quite a few tweaks as per Dogears recommendations and it sounds pretty good for a 50 watter.
330R on the choke resistor.

Do you know what the primary impedance is on the OT you have now?
The OT in my amp has dual primaries with 8K for 6V6 and 4K for 6L6 use.
Could just be the tubes aren't seeing what they need for impedance.

I liked your pickin and the tone of that modded amp! Nice. I would be happy with that.

When you consider Carlton, Ford and Landreth all play Dumbles with such distinctive different tones .......... I am not so sure there is "A" Dumble tone.
