I find the BM75's to be too bright, I use a regular M75 65w with my Express clone. I also have old Mullard preamp tubes in mine, which help tame the highs a bit. Express amps are bright anyway, so keeping the speaker a little more towards the lower mids helps. Too much upper mids and it gets tough to control the feedback.

I have a pair of M75s (top) and a pair of H75s (bottom) in a '69 slant cab. Killer sound with an Express.

A matter of taste. I prefer original blackback H30 bass cones (55Hz) in a 1982 w/ narrow checker board cloth and my Express Clone compared to Jim's M75 25W. Neither too harsh nor too bright, no problem handling feedback (all controls on 12). I always wanted to try his recreation of those, the BH55, let's see.

Do a search and see what Scumbacks Geetarpicker (Glen K) uses. Another thought is to audition quad with the Celestion EVH speakers, I say this as the speakers aren't as efficient was regular Celestion speakers and this may curb the excessive volume to some degree.

I have a 2x12 with Celestion G12M Heritage speakers (Exact same as the EVH ones) and they sound great with an Express. Bit stiff at first but they do loosen up

Thanks that's good to know, but aren't you cutting it a bit fine with the wattage?
I suppose EVH was using 80 watts of speaker with a 100 watt amp, though he was attenuating through various methods.
One 35 watt amp and two 20 watt speakers. Of course the Express is putting out more than 35 watts in full flight.

Glenn uses an M75 65 or 100w as a single 112 with his Express for some gigs, but he also has four M75 25w in a cab.
Since Glenn has an original Marshall cab with 25w G12M's from the late 60's, he uses that in his studio, but the Scumback
was what he brought to gigs to use, IIRC.
That may have changed, I haven't checked in with Mr. K for awhile on this.
Preamp tubes can definitely change some of the Express upper mid & treble output, so that may be why some
of the H30 offerings work with them. Personally an M75 65w was all I needed with an Express and my LP.

I always attenuate so it's never an issue. Unfortunately I haven't come across anywhere down here where I can play the amp full blast. My attenuator is a slight redesign of the Airbrake but matches the impedance better. At the lowest setting it shaves 4.5dB off, so the speakers would only see roughly 35W from a 100W amp.
Last time I measured my Express it was putting out 36.6W Clean and about 74W flat out. My JTM50 puts out 88W distorted and that's with a GZ34!!!
