So my next question would be to what extant can I just find a turret layout I feel comfortable with and get started on the ordering?!

If it would fit, a regular JTM45 board would work fine. You probably need a space about 3" x 12". If you just build the preamp and PI on the board, you probably need about 9" of that board and you can cut it.
The problem with a board is that it assumes you have all the tubes on one side of it and the controls on the other side. This isn't what you are going to have in that chassis and because of that you will have some odd hookup wire runs that may introduce noise. Your tube sockets are layed out otherwise and you will need to deal with that or get a new chassis. If you want an undrilled chassis, low price and good quality is from Dirty Dawg.
I suggest a generic board from someplace like Tube Depot (about $10 plus shipping) and that you cut the board into suitable pieces if you really want to use boards.
In a build like that, I'd probably spend several hours doing a PTP layout, hanging as much as I possibly could on the tube sockets and pots, supplemented by terminal strips.
Weber has a 6M45 layout on his website if you want to look at an example of a board build. Ceriatone probably has one, too.
This is not a beginners project, so you'll need to take your time and plan it carefully.

Cool news -
I actually went in after reading that (will def need to give more thought to layout wanting to keep the awesome stack chassis) and got the guitar running through it - (grounding and lose connection apparently) - but it sounds like 3 watts!?!?!
I feel like the input isn't set up the same as on a guitar amp and this magnetic/ crystal switch on here means nothing to me - I'm going to look into this more myself later today but I'll post the schematics I found in case anyone knows a simple fix..
Unfortunately the resolution is almost too low to be of use to my aging peepers but maybe someone else can make some sense of it..
Of interest to me is the second "Kappler" - seems to look a bit more like what I'm used to seeing..
Have to say that is a cool sounding tone stack on there the way it is right now even if it's quiet!

The mag/crystal switch is to accommodate different output levels from phonograph cartridges. Some old ones used a crystal transducer.
