When plugging in a resistive load in place of the speaker I can hear music coming out of the OT! About as loud as a fly buzzing around. Is this normal?
Output power of the 2xEL91 'wreck is 3W, so its not like there is a lot of power affecting the OT.

Yep, that's the OT 'singing', which is from tiny physical movements of the windings or the lams.
You'll find that chokes also do the same, as do capacitors, but these are all much quieter than the OT.
