Sweet rig. I like your yard. I need to get new setup. I drool over the Holland grills Everytime I go to the farm store. I'm not ready to put down a thousand bucks for one though.

Thanks, mine was 99$ at home depot :D

My yard is mostly self sustaining other than mowing, its the PNW and everything grows here, too much rain :D

cbass wrote: Thu Jun 14, 2018 12:51 pm Thanks Winder, they are far from perfect but I like my ribs a little bit more done on the outside then most folks. Yours look a lot more like what I'd expect from a real BBQ place.
It's actually my first go cooking ribs with this setup and I was running around 275 cook for 2 hours wrap and foil for an hour and then back on unwrapped.
I think they would have been better it just a little bit lower temperature they were a big ol thick hunk of meat.
Next time I'm going to try around 2:25 and they just skip the Foil.
It's not really even a smoker it's more of an indirect heat kind of deal. I place a steel plate over the coals to disperse the Heat and set a pan of water on that. Really it's about as a hillbilly set up as you can get.
Been cooking ribs at higher temps these days after years of watching "experts" on BBQ Pit Masters and other shows. I go with the wrap now too just so I know when they'll be done. Don't need a fancy pit! Whatever gets it done! 8)

You've got a lot of miles on that old Genesis. That was the first quality grill I ever owned. Been a while!
