Absolutely! Tape/wire nut the ends and tie them off somewhere for later use if desired. They will be at high voltage so they should be treated with reverence.
Before you remove the transformer from the chassis, identify/record which wires go to the power tube plates/screens/power supply rail (primary side) and which go off to speakerville (secondary).
For tube connections, record the wire color and pin number on the tube socket.
And/or...take good, close pictures and post them up here.

See if the iron follows the color coding in this Heathkit A7 schematic. Looks like there were a handful of variants. The last two (versions D & E) had ultralinear taps on the OT. Both D & E appear to follow the same OT color code.

This is it, thank you so much! I found some of those Heathkit A7 schematics but never saw the ones with the UL taps, missed those last few variations.
The wiring color code matches perfectly but I will double check the connections before I desolder the wires to make sure everything matches the schematic, it does look right though just briefly looking at it.
Should the UL taps be tied off together or separately?
Now I have to figure out what to build with the trannies, probably a Princeton or Deluxe variant, time to start looking at chassis etc.

There should be no problem ignoring the UL taps. Just use it like you would any other OT. The Heathkit iron is generally excellent stuff, too.
