Here's an Ebay link that shows the reverb section- should I try to preserve that, or the rotary speaker setup?
Or should I just gut it out for parts and pieces?

Baldwin used Magnavox speakers in a lot of their early stuff. 15 watts each driven by a 2x6L6 amp. I wouldn't...
The rotary speaker is probably a cheap seats Leslie. Those are cool.

Not sure what you can do with that other than use it for a chassis.

I know the Hammond I revamped was some pretty stout steel because I shortened it and it was hell bending it.

If stripping/parting it out is your idea of relaxation, by all means, go ahead and do it. There are times when I enjoy that sort of thing. If it were mine, I would make a bone pile of all things useful. I think you will find all sorts of good caps, resistors, sockets, terminal strips, buss wire, regular wire, chassis, etc., and maybe even some transformers.
If you know the use of the transformer(s) and what tube(s) it was used with, you can unload these on eBay for semi-serious money provided you have good info in your ad. Good info, means, in addition to telling it's previous use and tubes driven, if an OT, describe all the wires and note the turns ratios. If a PT, apply 120v to the primary and list the unloaded secondary voltages produced.
As far as chassis goes, if you think you are going to build something in it, don't be too quick to remove the sockets.
