Why limit yourself to +12V?
If you're building a bench supply, rectify separate supplies for +9V, +12v +24V/-24, +15/-15V...

Something like a 20v transformer and various (heat-sinked) regulators with plenty of filtering. Should be fine

I have a small portable cold-box which runs on 12V (cools with a peltier-element). To use the box at home, i bought a purposebuilt 12V, 5A switched-mode PSU for around $25,- They are small and lightweight for their power output.

Wouldn't that be a good startingpoint?

Or would even mentioning the word 'switched-mode PSU be a no-no here?
