I wouldn't buy a plasma cutter just to cut transformer and IEC holes but since I have one anyway for other reasons I thought I would try it.
Not very forgiving but damn, that was fast. Do try this at home but don't blame me if you sneeze and turn your chassis into modern art.

Carefu!
I have used a CNC plasma cutter for the EI scrapless GOES lam materials. Make sure you do not inhale the fumes. Bud Purvine & Nickolai Srvenovich both warned me about using plasma cutters & lasers to cut GOES nickel/silicon steel E-I lams. Nick invented the laser etching machine back in the 1980s. Bud makes one of the most aggressive fast PTs on the planet. He makes a darn nice set of 35,40,45, and 45, 50 & 100 watt Fender/Marshall OTs. His OTs are nice, but the PTs are a tad fast. Okay they are very fast. If you are making a bass amp, or can live with some tighter more aggressive bass, & less mid scoop, they are wonderful. The Marshall / Fender OTs are the same core same windings, but he adds 3 sheets of Kapton in the Marshall version to bring up the internal capacitance. How do they sound? Like they should. I used a CNC plasma cutter to cut laminates. Unfortunately the E-I is a scrapless design, so your sheet may start to sag or drop as it gets cut up.
Re: Plasma cutter
So Bud works for O-netic's transformers? I plan to call them about a quote for a 280w bass transformer I heard about.
The plasma cutters are great for making DIY suspension brackets for street rods or race cars.
