Capn, for a Rocket, a cab with Celestion Blues is great. Try a 1x12 with a Fane Axiom 16 Ohm from Dartanion on this forum. One of the best combinations I've heard for a Rocket so far. I think they're rated at 100W? The one I had was an oval back 1x12.

Re: celestion break in, or scumback or ???????
Imho: those "newer" 25 Watt GBs aren't like the old ones or SBs...
65 Watters will give you less piercing highs (the Heritages are even somwhat warmer than the old ones), Heritage M20s are even more "creamy" to my ears.
The 30 Watt Celestions (Ann. and Heritage) are pretty bright and Alnico Blues or Golds even more.
BeamBlockers can help a LITTLE bit to tame some nasty highs but it's subtle, for "widening" the sound of a very "beamy" cab it's a good solution imho.
