so i have a small collection of bad octal tubes, and some nice new sockets laying around, and i want to build a probe to check the plate voltage without opening the amp up.
My question is, would i wire it across pins 3 and 8 - as in one lead on pin 3 and one lead on pin 8? or would i just run one lead to the plate, and the other lead i clip to the chassis?

You could do it either way, but I would choose to have a wire also on pin 4 the screen.

another good option is a tube extender, a relatively safe way to check voltages

Those tube saver gizmos aren't expensive. Given the high voltage and potential danger, I'm not sure I'd want to use a home grown device. One slip is all you might get.
