10 volts isn't going to make a difference you can hear. I use toroids for my builds now, got some 0-260v + 0-6.3 v that i love, less buzz, don't even get warm, and cheaper than Hammond.

The Hammond 261G6 which is: 250V C.T. @ 130 ma and 6.3V @ 2A ... makes a good VJr replacement.
You DO NOT use the HV center tap, insulate, and ignore it ...
And as far as the 10V, since Hammond transformers are spec'd for 115V AC and today we have 120+ volt AC in the US the Hammond will be as high or possibly even higher voltage than the stock PT.
