If you have a thickness planer (or better yet thickness sander!!) you can double stick tape the 1/8" material to a larger board, then run the whole thing through the machine. I had to do this for many of the faceplates I made. I eventually just programmed the laser to countersink the 1/8" material enough for the nut and washer to fit. The 1/8" material works better anyhow.

What size do I need for the panels? Is it 1/16" x 2" x 17"?

contact the guy on the link i posted. He will cut them what ever size you want. 1/16" You can use that size and use normal size pot bushings. The 1/8" thick, you may have to use a pot with a longer bushing,or recess it somehow.
You could have him cut them about 17 and 1/8" Then trim off the end with a dremel. All depends on the cab you use,if you need a little extra on the end. He has all kinds of types of wood.
And they are not all that expensive. Just tell him what you want,and he should be able to fix you up,and cut the size you want.

PEC pots will fit the 1/8" stock as do switches. Long threaded jacks also fit.
Anything in moderation...nothing to excess
