Talking about the big dielectric can type ones.
Is there a brand or spec anyone would recommend, at a reasonable cost, as an upgrade to the ones Mojotone supplies?
Will changing them actually make any difference?
The spec as supplied with the kit is:
- 1 x 32/32 uF dual
- 1 x 50/50 uF dual
- 3 x 220 uF single
All 500 volt.
Also, if I can't find 220 uF, would 250 uF be acceptable substitutions? Should I go up.or down on the uFs , or stick strictly to the specified values?

Electrolytic caps are wide tolerance type components.
In the old days, the tolerance for higher voltage types was as loose as +100% to -50%.
These days +/-20% is typical
Hence for these purposes, 220 = 250.

Do you need the can type? F&T makes axial caps in all kinds of values, are super reliable, and cheaper than Spragues. 220uF easy. I get mine from Antique Electronic Supply.
Just plug it in, man.

The 'better' caps are all radials in place of the overpriced, underperforming axials available.

There is certainly better. Metalized Film caps are far superior, and never need replacing. The only problem is they take up more volume per Farad. An F&T 22uF electrolytic is 3/4" x 1.5" or so. A 22uFetalized Film is roughly 3" x 4" so you need more space than is typically available in a factory amp.
