Try changing the cathode follower resistor from 56k to 100k.

I can identify with the smooth sound- isn't that the big stereo OT not providing any OT added distortion? Go with the flavor of the amp - you can turn all the tones knobs to zero and work the old amp sound, or the Rocket has the best woman tone ever.. that's the tone down neck pickup sound.
I think the Mallory 150's add some grit to the breakup. The PS6 are real smooth- in my limited experience. Also try the KOA SPEER 1 watt from Mouser in all the places you can. They add a darkness that is cool.

I like Colossal's suggestion (can even go to 120k.) You could also change the tone stack values to alter the f of the signal to sound more raw. MFowler's suggestion of lower preamp voltage will decrease headroom but maybe that's what you're after. You could also rebias the stages to be slightly more into higher current territory. Seems (to me at least from my limited experience) more current through a tube makes it sound more "crunchy"...

Did you say what model speakers you're currently running?
To me, like others have noted, speaker changes make the most drastic difference between a smoother or crunchier tone...but obviously not the cheapest way to go when experimenting...
I agree also with Mark's suggestion of toying with Treble cap values...that made a substantial difference in making my Rocket have a more aggressive grind...
Another possibility would be to increase the 10k midrange resistor in the tone stack...I have a 25k pot for midrange control instead of the fixed resistor, turning that up gives the amp more of an up-front bark...
